Homemade Healthy Tortilla Chips

After a long and stressful week (read: panic attacks on the subway and then also at the post office...) all I wanted were some tortilla chips to go with the salsa I bought at Whole Foods. I had used it on quesadillas (so good) but chips and salsa are my favorite thing, and it was exactly what I wanted.

Unfortunately, I did not have any chips in my apartment, and I know tortilla chips aren't even that great for you, so I improvised. I made my own.

And if I made them, they had to be easy. Basically, I ripped up my sprouted grain tortillas and popped them in the oven on a cookie sheet at about 400 degrees for five minutes. Then I flipped them and sprinkled a little cheese on top, and put them in for a few more minutes, until the cheese melted. Boom. Done. They were crispy and delicious and exactly what I was looking for.

Unlike healthy pizza, healthy tortilla chips do exist.
